    Benchmark your storage providers. Build long-term data records for statistical analysis, and identify trends. Avoid fluctuations and extremes in temperature in your long-term storage area. Humidity of 55 – 75% is ideal for stable wine aging. Levels of 80% or higher will cause mold to form which can rot the labels. Lower levels of humidity will increase the amount of ullage forming in the bottle, and will also dry-out the glue beneath the label.

  1. Systems Verification

    Properly validating a system process requires objective evidence, and an independent sensing system must be used. An automation system controls a process; a data logger monitors the process. Control and recording systems that operate without this redundancy can appear to work satisfactorily, but may be operating well outside of specifications. Data logging provides an objective “double-check” of system performance, and makes it obvious if the controller is out of calibration.

  1. Ventilation Systems Inspection

    Verify mechanical systems during testing/balancing and commissioning. Both new installation and retrofit of systems undergo this process. Spot measurement alone is not adequate. Trend logging is required in cooling and heating modes to verify proper operation. It will also reveal problems such as inadequate airflow, control valves reversed or jammed, and faulty mechanical device sizing.
